2 kg Peeled tomatoes
100 g Basil
250 g Garlic cloves
40 g Sugar
250 ml Water
Method of preparation
Put the tomatoes in a bowl of boiling water for 1 min.
Plunge them into a bowl of ice water. The skin will slide off the tomatoes.
Cut the tomatoes into quarters.
Sauté the chopped garlic and the basil in olive oil.
Let it cook for about 5 min on a low temperature.
Add the tomatoes and the water.
Gently simmer for 15 min on a low temperature and bring it to boil to thicken the mixture.
Add the sugar to reduce the acidity.
Salt according to taste.
Strain the sauce.
