Caldo Verde

Caldo Verde


  • 500 g Kale or spring greens (washed)
  • 3 large Potatoes, peeled and cut into small cubes
  • 1 large Onion, finely chopped
  • 1 tsp. Salt
  • 2 tbsp. Olive oil
  • 2 L Hot water

Method of preparation

  • Shred the kale leaves as finely as possible and set aside.
  • Place the potatoes and onion in a large pot with the water, add the salt and bring to boil, cover and leave on low heat for 25 min. or until the potatoes are completely tender.
  • Turn of the heat, in the same pot, mash the potatoes to thicken the broth, add the oil, the shredded leaves, cover and bring it to boil for 5 min. 
  • Ladle into bowls, add the chili sauce and serve steaming hot
