Grilled Shrimp Caesar Salad



1/2 kg. wild caught shrimp, peeled and deveined

1 tablespoon canola oil

1 head of romaine, cut in half

1/2 cup halved grape tomatoes

1 avocado, sliced

2 tablespoons pepitas

Caesar Dressing


1 garlic clove

1 teaspoon stone ground mustard

a few dashes of tabasco, to taste

juice of half a lemon (1 1/2 tablespoons)

1 tablespoon of grated parmesan cheese

1/4 cup white wine vinegar

1/4 cup olive oil

salt & pepper to taste
