Quinoa with Chicken and Herbs

200g of Quinoa
1 Onion

1 Garlic clove

4 slices of Chicken Whites

1 tbsp. of Coriander

1 tbsp. of Cumin

50g of Cranberries

75g of Chopped Apricots

4 tbsp. of Chopped Parsley

4 tbsp. of Mint
1 tbsp. of Olive Oil

Zest of one lemon
Method of Preparation
Cook the quinoa in salted boiling water for 15 min so that it becomes soft, then drain it.
Meanwhile heat the oil in a large pan, add the onions, leave for 5 minutes till they become tender .
Add the garlic, the chicken, coriander and cumin. Cook from 8 to 10 minutes till the chicken is done.
Add salt and pepper to the quinoa. Mix with chicken, cranberries, apricots, herbs and the lemon zest .
