Chicken Satay with Peanut Sauce

Chicken Satay with Peanut Sauce

 Serves 5ppl/ 20min cooking time

Ingredients


 

 Sauce

3/4 cup coconut milk

1/4 cup chunky peanut butter

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon Thai red curry paste

1 tablespoon freshly squeezed lime

Chicken

2 chicken breasts, cut into large chunks

1 medium onion

2 tablespoon curry powder

2 tablespoon oil

1tsp salt and pepper

1 lemon

10 skewers


Method Of Preparation


Chicken:

Cut the chicken into small pieces and mix with all the chicken ingredients. 

Skewer with onion. Let rest for 30min at least.

Add oil to heated pan to grill the chicken.

Sauce:

In a pan on a medium heat add: Coconut milk, curry paste, sugar, fish sauce, peanut, salt & pepper stirring occasionally.

Bring to boil, remove the pan from the heat, add lime juice and let to cool.
