Coconut Cookies


375 g Coconut powder

500g Egg white

375g Sugar

60g Flour

80g Butter



Method of preparation

In an electric mixer, beat together the egg white and half the amount of the sugar for approximately 30 seconds

then higher the speed of the electric mixer and add the rest of the sugar.

Gradually add the vanilla, the coconut powder, the flour and the soft butter.

Mix together until they are just combined.

Fill the dough in a piping bag.

Form 1-inch Balls and place them 2 inches apart on a baking sheet.

Bake until just starting to brown for 15 to 20 minutes in a preheated oven on 190 C.

Dip the cookies in the chocolate and sprinkle with some coconut.
